Nyons AOC olive
oil
The Tanche olive provides a unique tasting oil thanks
to the local climate and geographic location. Less bitter
and smoother, with hazelnut, almond and green apple flavours,
it is used primarily uncooked, though it is also suitable
for cooked dishes.
Rich in vitamin A, D and especially
E, F and K,
olive oil's health virtues are well recognised today (prevention
of cardio-vascular diseases, lower
blood pressure and prevention of aging). |

Nyons black olive
Sorted and sized, the olives are immersed for six months
in a water and salt mixture, without any chemical products
or preservatives.
A 100% natural olive with essential
trace elements (vitamins A, B
and E), it has as much calcium as milk.

La tapenade
A typical Provencal specialty, it is prepared according
to traditional and natural recipes. The olives are pitted
and the paste mixed with capers and Provence herbs before
being mixed with olive oil. It is served on toasts as
an appetiser, as an accompaniment for cold meats or
as a replacement for condiments in cooking.
